The history of the chocolate chip cookie is well documented in American history books. Originating in the United States at around 1938, it all started when American chef Ruth Graves Wakefield chopped up a Nestlé semi-sweet chocolate bar and added the chopped chocolate to a cookie recipe.

These days, it’s hard to imagine life without this celebrated cookie (indeed, it’s hard to think of a glass of milk without its glorious sidekick or better half). Recipes for this delightful treat are now outrageously sweet and even more outrageously crisp. But finding just the perfect cookie can be tough.

Most recently, we’ve come across Melissa Stadler’s cookie chip recipe. Though the recipe itself was uploaded quite some time ago, it pops up once and again in food blogs and Instagram, crowned as the Famous Levain Bakery Chocolate Chip Cookie Recipe.

“These aren’t some ordinary bite-size cookies,” writes Stadler on her website. “No, these are a full-on meal. Well maybe for some people.” The trick, says Stadler, is in their size. “Here’s the deal—you make them big. Really big. Like only four can fit on a cookie sheet, BIG. These are the BEST CHOCOLATE CHIP COOKIES EVER. Yep, I said it.”

A two-time Pillsbury Bake-Off finalist, Stadler knows what she’s talking about. Her food blog and accompanying Instagram page are filled with quick and easy dinners, healthy recipes, and mouthwatering desserts. But you’ll definitely want to start with the cookies.

While we slowly adjust to a new normal and test the waters of life-after-Covid, the future of travel is still shrouded in mist. Until traveling is permitted and safe, we might as well explore the world through our kitchens.

This week we bring you Hetty Lui McKinnon’s cookbook To Asia, With Love, a great introduction to Asian cuisine. Born in Australia to a Chinese family, and currently based in Brooklyn, New York City, McKinnon describes her book as “a deeply personal and emotional deep dive into food as a gateway to discovering cultural identity.”

“This is my love letter to all the Asian food that I crave everyday,” wrote McKinnon on a post on Instagram. “Some of the recipes are inspired by the Chinese food I ate growing up, but mostly it is a modern interpretation of my fave Asian flavors.”

Recipes range from the traditional—salt and pepper eggplant, red curry laksa, pea, and ginger fried rice—to uniquely modern interpretations, such as buttery miso vegemite noodles, stir-fried salt, and vinegar potatoes, cacio e pepe udon noodles, and grilled wombok caesar salad with wonton crackers.

According to McKinnon, the Chinese recipes she shares in her book are all, in one way or another, inspired by her mother’s food. Just scrolling through her Instagram page will make your mouth water!

Jessica Merchant wants to be your resource for everyday recipes. Which is easier said than done. According to the self-taught cook, in order to share her recipes daily, she makes upwards of six recipes per day.

Her hard work seems to have paid off. With almost 380k followers on Instagram, Merchant has become the go-to source for easy, quick recipes and is also a best-selling cookbook author, with both Seriously Delish, and The Pretty Dish becoming instant bestsellers.

“One of my main points is to not be afraid to make things your own,” she told Bakepedia. As an example, she gives her crisps recipe: “I knew that my readers love crisps, and I started thinking about how I could make one that was just a bit different, but still easy and accessible.”

Her experimental approach means she’s admittedly a better cook than a baker, as she has an aversion to following instructions of any kind. “My desserts aren’t as precise as many [dessert recipes], and a lot of them allow you to swap things in and out,” she states, “it’s all about trial and error; that’s how I learned to bake. So don’t be afraid!”

Indonesian-Australian chef and food writer, Lara Lee, is very much in tune with her roots. Her recent cookbook  Coconut & Sambal, is a celebration of the Indonesian kitchen, inviting readers to immerse themselves in a culture known for its spices and unique combination of tastes like sweet, salty, sour, and bitter.

According to Lee, the key to creating a tasty Indonesian meal is balance—of textures, produce, and flavors. “A traditional Indonesian meal will feature vegetable, meat, and fish dishes prepared in different ways, such as steaming, frying, or sautéing,” she relayed in an interview with National Geographic.

Lee adds that the dish that best sums it up is nasi goreng. “Recipes vary, but most start with rice stir-fried with spice paste and a mix of vegetables, tofu or meat, all served with a crispy fried egg on top and kerupuk (crackers) on the side,” she further explains, adding that this dish is often eaten for breakfast.

Named as the Best Cookbook of Fall 2020 by The New York Times and Eater, Coconut & Sambal is Lee’s first book, and an homage to the culture she knows and admires. But before returning to her roots, Lee’s trained as a chef at Leiths School of Food and has spent time working in Michelin starred kitchens.

“I began my research with the doyenne of Indonesian cuisine, writer Sri Owen,” she explains how her research process came about. “Thanks to her, I was introduced to home cooks across Indonesia.” Lee then traveled around Indonesia for a whole year, collecting more than 300 recipes, which she later whittled them down to 85, adapting them to better suit her taste.

Award winning recipe writer, Georgina Hayden, admits to growing up in a very food-driven household. “For a long time, I didn’t realize how much my family influenced my life,” she recently shared in an interview with National Geographic. “I assumed all families were food-driven. Since then I’ve learned it was a pretty special childhood.

Food was, indeed, interwoven to her upbringing. Growing up above her grandparents’ Greek Cypriot taverna in Tufnell Park, London, Hayden soaked up the Greek kitchen from a young age. And with both sets of grandparents having emigrated from Cyprus in the late 1950s—there was a lot to soak up.

But it took her some time to return to her heritage, dedicating a cookbook (titled aptly, Taverna) to the traditional Cypriot kitchen. Her first stop was studying Fine Art at university, after which her passion for food landed her a job as a food writer and stylist on various food magazines.

Hayden then went on to join Jamie Oliver’s food team, where she worked for 12 years. But eventually, she returned to where it all began—the family kitchen. Like most family kitchens, Hayden describes the act of cooking as fairly instinctive. “There are no written recipes, and my mum and yiayias would cook whatever was in season,” she recalls.

As the pandemic presses on, more people than ever before have settled into routines that involve home cooking, and studies suggest these habits will continue after the pandemic. But if it’s your first time in the kitchen, it’s easy to be overwhelmed.

Luckily for us, recipe developer, food stylist, and cookbook author Dana Shultz, is here to make things easier. The mastermind behind the Minimalist Baker, Shultz’s goal is to simplify the act of cooking. Her recipes, shared on her website and Instagram, require 10 ingredients or less, one bowl, or 30 minute or less to prepare.

“The first and most important approach to food is simplicity,” remarked Shultz in an interview with BakepediaThat’s important to me because that’s the way I cook, and the way I search for recipes online and in cookbooks to actually make.”

Her recommendation for cooks at all levels: read the whole recipe beforehand. “I always recommend reading the whole recipe start to finish and observing the required prep and cook time before starting,” she explains, “so they have an idea of what they’re getting into and aren’t surprised along the way.”

Another recommendation is to stick to the recipe and not make too many substitutions or alterations, especially if the recipes are vegan and gluten-free, which can be trickier.

If you don’t have fancy ingredients, expensive equipment, or hours to cook, you might just want to follow her footsteps.

Harry Potter mega fans might recall a scene where Hermione reproaches Ron. “Your mother can’t produce food out of thin air,” says the knowledgeable witch in the seventh book of the series, Harry Potter and the Deathly Hallows. “No one can.”

But if there’s one original witch that can actually produce food out of thin air it’s J.K. Rowling herself. All seven of the Harry Potter books are filled with mouthwatering references to food, starting with Dudley Dursley’s Knickerbocker Glory and ending with Cauldron Cakes. And then there’s the fan-favorite Butterbeer, consisting of a cream soda-meets-butterscotch flavor and a sweet whipped topping.

And while you can’t actually taste the Harry Potter books, many have tried to recreate the magic. For one thing, there’s the Wizarding World of Harry Potter at Universal Studios where even us muggles can visit Hogsmeade and Diagon Alley. The tasty British fare includes dishes like The Great Feast, Fish and Chips, Shepherd’s Pie, Beef Pasties, Turkey Legs, and Fresh Vegetables.

There’s also the famous Butterbeer. “We found out very, very quickly when we opened that Butterbeer was definitely an overnight homerun,” admitted the corporate executive chef of Universal Orlando Parks and Resorts, Steven Jayson, in an interview with USAtoday. “Hands down, that’s the one thing that we’ve created here at Universal Orlando that stands alone.”

With most of us homebound, you can now experience the Wizarding World of Harry Potter even through Instagram, with a fan dedicated Instagram account documenting the theme park with its many book-inspired treats.

As the pandemic presses on, more people than ever before have settled into routines that involve home cooking, and studies suggest these habits will continue after the pandemic. But if it’s your first time in the kitchen, it’s easy to be overwhelmed.

Luckily for us, recipe developer, food stylist, and cookbook author Dana Shultz, is here to make things easier. The mastermind behind the Minimalist Baker, Shultz’s goal is to simplify the act of cooking. Her recipes, shared on her website and Instagram, require 10 ingredients or less, one bowl, or 30 minute or less to prepare.

“The first and most important approach to food is simplicity,” remarked Shultz in an interview with BakepediaThat’s important to me because that’s the way I cook, and the way I search for recipes online and in cookbooks to actually make.”

Her recommendation for cooks at all levels: read the whole recipe beforehand. “I always recommend reading the whole recipe start to finish and observing the required prep and cook time before starting,” she explains, “so they have an idea of what they’re getting into and aren’t surprised along the way.”

Another recommendation is to stick to the recipe and not make too many substitutions or alterations, especially if the recipes are vegan and gluten-free, which can be trickier.

If you don’t have fancy ingredients, expensive equipment, or hours to cook, you might just want to follow her footsteps.

Harry Potter mega fans might recall a scene where Hermione reproaches Ron. “Your mother can’t produce food out of thin air,” says the knowledgeable witch in the seventh book of the series, Harry Potter and the Deathly Hallows. “No one can.”

But if there’s one original witch that can actually produce food out of thin air it’s J.K. Rowling herself. All seven of the Harry Potter books are filled with mouthwatering references to food, starting with Dudley Dursley’s Knickerbocker Glory and ending with Cauldron Cakes. And then there’s the fan-favorite Butterbeer, consisting of a cream soda-meets-butterscotch flavor and a sweet whipped topping.

And while you can’t actually taste the Harry Potter books, many have tried to recreate the magic. For one thing, there’s the Wizarding World of Harry Potter at Universal Studios where even us muggles can visit Hogsmeade and Diagon Alley. The tasty British fare includes dishes like The Great Feast, Fish and Chips, Shepherd’s Pie, Beef Pasties, Turkey Legs, and Fresh Vegetables.

There’s also the famous Butterbeer. “We found out very, very quickly when we opened that Butterbeer was definitely an overnight homerun,” admitted the corporate executive chef of Universal Orlando Parks and Resorts, Steven Jayson, in an interview with USAtoday. “Hands down, that’s the one thing that we’ve created here at Universal Orlando that stands alone.”

With most of us homebound, you can now experience the Wizarding World of Harry Potter even through Instagram, with a fan dedicated Instagram account documenting the theme park with its many book-inspired treats.

Hunger managed!
