⁣ Vegan Mini Madeleines 🌱 ⁣ Coated with purple sweet potato and ebony carrot glaze 💜💗 @suncorefoods⁣ ⁣ Dry ingredients ⁣ 1/2 cup cake flour *60g ⁣ 2 tbsp almond meal, *15g ⁣ 1 tbsp cornstarch *8g ⁣ 1/4 cup sugar of choice *50g ⁣ 1 tsp baking powder *4g ⁣ ⁣ Wet ingredients ⁣ 1 flax egg *43g ⁣ (1 tbsp *6g flaxseed meal with 2 1/2 tbsp *37g water) ⁣ 2 tbsp yogurt *35g ⁣ 1/2 tbsp maple syrup *10g ⁣ 1 tsp vanilla extract *4g ⁣ 75g dairy-free butter ⁣ ⁣ Chocolate Glaze ⁣ 65g melted organic cocoa butter⁣ 20g soy milk powder ⁣ 25g powdered sugar ⁣ @suncorefoods purple sweet potato and ebony carrot powder for the colours.⁣ ⁣ ⁣ In a large mixing bowl, combine all dry ingredients and set aside. ⁣ Whisk together wet ingredients. Then pour wet ingredients to dry. Gently mix until just combined. Refrigerate the batter at least 20 minutes or until batter is thicken.⁣ ⁣ Brush Madeleine pan with melted vegan butter. Scoop about 1 tsp batter into mini moulds Bake at 170c preheated 10-12 minutes (mini pan) until edges begin to become a little golden. Allow Madeleines to cool slightly and transfer to a cooling rack to cool completely. ⁣ ⁣ Combine all glaze ingredients and mix until smooth. ⁣ Dip Madeleine into the glaze. ⁣ Passion Fruit Tart with Coconut Chantilly Cream 🌱 ⁣ Baked in @patissenederland rectangle tart tin 💛💛⁣ ⁣ Passion fruit cream filling ⁣ 200g passion fruit pulp, about 6 passion fruits ⁣ 400ml full fat coconut milk ⁣ Juice of 1 lemon ⁣ 1/4 cup sugar of choice ⁣ 2 tbsp cornstarch (dissolved in 1/4 cup water )⁣ 1 tsp agar agar powder ⁣ ⁣ Coconut Chantilly Cream ⁣ 150g full fat coconut milk ⁣ 100g dairy free white chocolate ⁣ 220g coconut whipping cream, chilled ⁣ ⁣ Crust ⁣ 1 1/4 cups all purpose flour *150g⁣ 1/4 cup almond meal *28g⁣ 1/4 cup powdered sugar *35g⁣ 90g cold vegan butter⁣ 1/2 tbsp cold almond milk *7g⁣ 1 tsp vanilla extract ⁣ pinch of salt⁣ ⁣ Chantilly cream⁣ Bring coconut milk to a boil, pour hot milk over the chocolate and whisk until smooth. Add the cold coconut whipping cream and whisk for 2 minutes. Cover and refrigerate overnight. ⁣ ⁣ Crust ⁣ Preheat oven to 180c. Grease a rectangle tart tin Set aside. In a food processor, add crust ingredients, pulse until combined and dough ball forms. ⁣ ⁣ Firmly press mixture into the tart pan with your hands, press into bottom and up the sides of tart pan. Bake for 15-20 minutes until golden brown. Transfer to a wire rack and let it cool. ⁣ ⁣ Filling ⁣ add passion fruit pulp and lemon juice into a blender. Pulse the blender to separate the seeds from their gelatinous membrane. Rest a fine mesh sieve over a small bowl and pour the passion fruit into the sieve. Use the back of a spoon to press out the juice. ⁣ In a saucepan, bring coconut milk and sugar to a boil. Add agar-agar and stirring constantly until completely dissolve, about 2 minutes. Add passion fruit juice, dissolved cornstarch, stirring constantly until smooth. Lower the heat and let simmer for 1 min. Pour mixture over the tart and refrigerate until set. ⁣ ⁣ Whip chilled Chantilly cream with an electric mixer until soft peaks form. Pipe cream on the tart and serve. ⁣ ⁣ ⁣

Soft & Fluffy Cranberry bread with Butterfly Pea Flower 💙 ⁣ ⁣ Coloured with butterfly pea flower powder 🦋 @suncorefoods ⁣⁣ ⁣Happy Sunday! Sending lots of love 😚⁣ ⁣⁣ Ingredients ⁣⁣ 2 cups bread flour *240g ⁣⁣ 1/2 cup milk of choice *120g⁣⁣ 3 tbsp condensed coconut milk *57g ⁣⁣ 40g dairy free butter ⁣⁣ 2 tbsp sugar of choice *25g⁣⁣ 1 1/2 tsp active dry yeast ⁣⁣ 1/4 tsp salf⁣⁣ ⁣⁣ 1 tsp butterfly pea flower powder *3g (dissolved in 1 tsp water) ⁣⁣ ⁣⁣ 1/4 cup dried cranberries⁣ ⁣ In a stand mixer, add all ingredients except for butter. Mixing on low-medium speed with the hook attachment until the dough comes together, about 10 mins. Add butter, a few pieces at a time. Scrape down the bowl. Continue to kneading on medium speed for 10 mins until the dough is smooth. ⁣⁣ ⁣⁣ Remove half of the dough from the mixer, set aside. Add butterfly pea flower powder into the half dough and continue kneading until it combined. Knead plain dough and butterfly pea flower dough into balls. Cover let them proof for 1 hour until doubled in size. ⁣⁣ ⁣⁣ Transfer to a clean surface. Form the dough into a ball and let it rest for 10 mins. Roll out dough until they form thin rectangle. Place butterfly pea flower dough on top of the white dough, sprinkle the cranberries and begin rolling up the dough along the wide/long side of the rectangle, Place it in a bread pan and let rise until doubled in size, about 1 hour. Sending big hugs and love ♥️⁣ ⁣ ⁣ Ingredients ⁣ 2 1/2 cups spelt flour *300g ⁣ 1 1/2 tbsp matcha powder 12g @suncorefoods⁣ 2/3 cup sugar of choice *130g ⁣ 1 tsp baking powder⁣ 1/2 tsp baking soda ⁣ 1/4 tsp rose salt ⁣ ⁣ 1 cup unsweetened soy milk *250g ⁣ 1/2 cup dairy free yogurt *125g ⁣ 3/4 cup coconut oil or dairy free butter melted *170g ⁣ ⁣ 200g dairy free white chocolate ⁣ 1 tbsp matcha powder 8g @suncorefoods ⁣ ⁣ Instructions⁣ Preheat oven to 175c. Prepare cakelet pan and set aside. I used Ruffled Medallion Dessert Mold from @nordicwareusa .⁣ ⁣ In a large bowl combine dry ingredients. In a separate bowl, mix together wet ingredients. ⁣ Slowly add wet mixture to dry. Gently mix to incorporate. Spoon batter into prepared pan. Tap gently against the counter to release air bubbles. .⁣ Bake for 25 minutes until or until a toothpick inserted into the center comes out clean. Remove pan from the oven and let cool in pan for 10 minutes on a wire rack. Invert cakes onto rack and cool completely.⁣ ⁣ ⁣ Combine melt chocolate, matcha powder and mix well. Coat matcha cake with melted chocolate. Purple sweet potato sandwich cookies 💜💜💜 with vanilla cream filling | Vegan 🌱 ⁣ Using organic sweet potato powder from @suncorefoods 🌱 ⁣ ⁣ ⁣ Ingredients ⁣ 2 cups all purpose flour *240g ⁣ 2 tbsp purple sweet potato powder *16g ⁣ 100g dairy free butter ⁣ 1/2 cup sugar of choice *65g ⁣ 3 tbsp dairy free milk of choice 42g⁣ 1 tsp vanilla extract ⁣ 1/4 tsp rose salt @suncorefoods ⁣ 1/2 tbsp Ebony black carrots powder for the colour *4g ⁣ ⁣ Filling ⁣ 1/4 cup vegan margarine *58g ⁣ 1 cup powdered sugar *120-140g ⁣ 1 tbsp coconut milk ⁣ 2 tsp vanilla extract⁣ pinch of salt⁣ ⁣ Cookies ⁣ In a large bowl cream together sugar and butter. Add in flour, sweet potato and carrot powder, milk, vanilla. salt and mix until well combined. Wrap cookie dough with cling wrap and refrigerate for 20 mins.⁣ ⁣ Preheat oven to 170c. Lightly flour work surface and rolling pin. Roll dough out onto a piece of parchment paper to about 1/4-inch thickness and cut out the dough using a cookie cutter. Bake cookies for 12-15 minutes. Allow cookies to cool completely.⁣ ⁣ Vanilla cream filling⁣ Beat together filling ingredients.
